BLT Pasta Salad

Whenever I think of summer I always think of BLT’s because who doesn’t love a good bacon, lettuce and tomato sandwich? This is not a post about sandwiches though. I wanted to do something a little different. This recipe is my take on BLT pasta salad. We swapped the lettuce for spinach because spinach and pasta always go really well together. I used Earthbound Farm Organic Baby Spinach in this recipe. Their products have always been a favorite of mine because they are high quality and they taste really good. Baby Spinach has always been one of my favorite greens because the leaves are super tender. It’s always a great accompaniment to anything that its paired with.

Although I kept this recipe super simple, its really easy to customize it. You can add whatever fresh veggies you have on hand. The only ingredients that I absolutely recommend including are the spinach, cherry tomatoes and bacon. You can switch up the other ingredients to your liking though. I used regular pasta but I imagine that this would be good with any type of pasta though.

Ingredients for BLT Pasta Salad

Pasta

Cherry Tomatoes

Red Onions

Bacon

Earthbound Farm Organic Baby Spinach

Mayo

Plain Yogurt

Cane Sugar

White Wine Vinegar

Salt & Pepper

Substitutions

If you prefer not to use mayo, you can just use yogurt but the dressing will have less flavor. I would not recommend just using mayo though. You can substitute white wine vinegar for white vinegar but you might need to use a little less. You can use any type of onions in place of the red onions. You could also use honey in place of the cane sugar.

How to Make BLT Pasta Salad

First, cook the pasta al dente according to the instructions on the package. Make sure not to overcook it because no one likes mushy pasta. Then prepare the dressing. Just mix the ingredients together until they are combined. Add salt and pepper to taste. Once the pasta is drained, mix all the ingredients together. This pasta is best served immediately.

BLT pasta salad with a light creamy dressing and spinach.

Ingredients:

  • 8 oz pasta
  • 4 cups earthbound farm organic baby spinach
  • ½ cup cherry tomatoes, halved
  • ½ cup red onions, sliced
  • ½ avocado, sliced
  • 5 slices thick cut bacon, crumbled
  • ½ cup mayo
  • 1/3 cup plain yogurt
  • 1 tbsp cane sugar
  • 1 tbsp white wine vinegar
  • Salt & pepper to taste

Instructions:

  1. Cook the pasta al dente according to the instructions on the package While the pasta is cooking, mix the mayo, plain yogurt, sugar, vinegar, salt and pepper together. Once the pasta is drained and cooled, transfer it to a large bowl with all the remaining ingredients. Toss the ingredients together. Then pour the dressing in and toss until combined. This is best served immediately.
