Creamy Vanilla Oatmeal with Cinnamon Apples

Oatmeal is one of the best breakfast choices ever if you ask me. There are so many ways to customize it. Plus it’s super filling and it will generally keep you satisfied for hours. I love to have oatmeal after a workout. I generally add collagen peptides to my oatmeal to make it extra creamy, but collagen also has many benefits.

What are the Benefits of Collagen?

Collagen is the most abundant protein in our bodies. It makes up our hair, skin, nails, and connective tissues. Rolled Oats

Almond Milk

Collagen Peptides

Vanilla

Butter or coconut oil

How to Make Creamy Vanilla Oatmeal

First add the oats, almond milk and water to a medium sized pot. Bring the oats to a boil. Then reduce the heat to low. Add in a pinch of salt, and the vanilla and cook over low heat until the oats thicken. Stir the oats frequently so they don’t stick to the bottom of the pot.

Once the oats thicken, stir in the collagen and maple syrup to taste. Continue cooking until the oats are the desired consistency. If the oats thicken too much, add more water 1 tbsp at a time until the desired consistency is reached.

How to Make Cinnamon Apples

First heat the butter over medium heat. Then add in the apples, maple syrup and cinnamon. Stir until the apples are well coated. Cook the apples util they are tender (about 7-10 min depending on the type of apple). Make sure the stir the oats occasionally.

ingredients:

Creamy Vanilla Oatmeal
  • 1 cup rolled oats (organic if possible)
  • 1 cup water
  • 1 cup almond milk
  • 2 tsp vanilla extract
  • Pinch of salt
  • 2 scoops collagen
  • Maple syrup to taste
Cinnamon Apples
  • 1 tbsp butter or coconut oil
  • 1 large apple, chopped into bite size chunks
  • 1 tsp cinnamon
  • 1/2 tbsp maple syrup

How to cook Creamy Vanilla Oatmeal with Cinnamon Apples

For the oatmeal:
  1. Add the adds water and almond milk to a medium sized pot. Bring the oats to a boil, then reduce the heat to low. Stir in the vanilla and salt. Simmer over low heat until the oats thicken (about 10 min). Make sure to stir the oats frequently while they cook.
  2. Once the oats thicken, stir in the collagen followed by maple syrup to taste. I normally use a couple teaspoons but everyone's taste buds vary.  Continue to cook until the oats are the desired consistency. If the oats thicken too much, add a little more water 1 tbsp at a time.
For the cinnamon apples:
  1. While the oats are cooking, prepare the apples. Heat the butter or coconut oil in a pan over medium heat. Then add in the apples, cinnamon and maple syrup. Cook the apples, stirring occasionally until the are tender. This could take about 7-10 minutes depending on the type of apple. 
  2. Once the oats are done cooking, divide them amongst  two bowls and top with the apples. I like to serve mine with tahini and pumpkin seeds.
