Cranberry Walnut Chocolate Chunk Cookies

 

These cranberry walnut chocolate chunk cookies are the perfect holiday treat. The cranberries add just the right amount of tartness to this buttery, chocolaty cookie.

The only holiday cookie you really need. I am not sure what it is about this time of the year, but there’s literally cookies everywhere. I guess its because Santa eats cookies? Anyway, I love a good chocolate chunk cookie. Chocolate chunks have a way of dispersing themselves throughout cookies in a different manner than chocolate chips do. I recommend grabbing a good quality dark chocolate bar for this recipe. They make the tastiest chocolate chunks.

What are the Ingredients for Cranberry Walnut Chocolate Chunk Cookies?

The ingredients for this recipe are so simple. If you are like me and you like to bake then you probably already have most of these ingredients:

Butter

Brown Sugar and Cane Sugar

Flour

Vanilla

Eggs

Dried Cranberries

Chocolate Chunks

Walnuts

Baking Soda

How to Make Cranberry Walnut Chocolate Chunk Cookies

First cream the butter and sugar and butter. This step is important! I recommend using a hand blender if you have one. Then add the egg in and blend until smooth.

Add in the flour, baking soda and salt. Mix until combined. Make sure not to over mix the dough.

Them fold in the walnuts, dried cranberries and chocolate chunks. Chill the dough and then get to baking.

ingredients:

  • 1 stick butter
  • 1 cup brown sugar
  • 1/2 cup cane sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups + 2 tbsp flour
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1/4 cup chopped walnuts
  • 1/2 cup dried cranberries
  • 1/2 cup chocolate chunks

How to cook Cranberry Walnut Chocolate Chunk Cookies

  1. Using a hand mixer, cream the butter, brown sugar and cane sugar in a large bowl.  Add in the egg and vanilla and blend until smooth.
  2. Add in the flour, baking soda and salt and blend until the ingredients are incorporated. Fold in the chopped walnuts,  dried cranberries and chocolate chunks.  Place the dough in the fridge for 30 minutes.
  3. Preheat oven to 350 F. Line a cookie sheet with parchment paper. Scoop the dough onto the sheet (about 2 tbsp) and bake for 10 minutes or until the edges are golden brown.
