Veggie Fried Rice

File_000 (49).jpeg

If I had to choose a favorite food, it'd probably be rice. I know sounds so boring but there are so many ways to spice it up and this recipe is one of my favorites. I love to prep this rice for the week to have with my meals. You can honestly use any mixture of veggies but I listed my favorite ones for this recipe.

I have tried this recipe with olive oil and avocado oil but they just don't compare to the butter. A little butter never hurt anyone so I would reccomend sticking with it. You could also use ghee to keep it dairy free!

** If your skillet is too small you may have to split the veggies and rice in half and cook separately. This is what I normally do.
