Roasted Veggies with Lemon Tahini Dressing
I am here to assure you that roasted veggies make everything better.
Preheat your oven to 425 F. Prepare your veggies of choice and brush them (or drizzle) with olive oil and season them with salt and pepper to taste. Cover a pan with foil and place the veggies on the pan.
Roast the veggies for 20-25 minutes. While the veggies are roasting prepare the dressing.
Lemon Tahini Dressing
1/4 cup tahini
1/4 cup olive oil
1/3 cup water
1 tsp minced garlic
2 tbsp lemon juice
1/2 tbsp honey
Salt and pepper to taste.
Place all of the ingredients into a food processor or blender and blend until smooth. If you would like for the dressing to be a thinner consistency you can add more water.
