Have you ever had savory waffles? The other day when I was testing the recipe for these waffles, I asked my mom to taste them and she said “where’s the syrup?”. I said to her: “Listen These are savory waffles and they don’t really require any syrup”. But they are great with other toppings like plain yogurt, and herbs. In my opinion, you haven’t really lived until you’ve tried savory waffles. Okay maybe that’s a little extreme, but these waffles definitely changed my life. They are super flavorful because of the cheddar cheese and scallions. They are also moist because of the olive oil which also adds good flavor too.

When it comes to olive oil, I am super picky. I always opt for high quality olive oil because I do feel as though I can taste the difference. Good olive oil will have a slight bitterness and it may also burn your throat a little as well (California Olive Ranch). Good quality olive oil will always be packaged in dark colored bottles to protect the oil from oxidation. I have always loved California Olive Ranch olive oil. They take pride in what they do and they are super transparent about their processes.

Unbleached all purpose flour

Cornmeal

How to Make Savory Cheddar Scallion Waffles

The process is so simple! First mix the wet ingredients until they are combined. Then fold in the dry ingredients. After everything is mixed together, it is important to follow the instructions of your waffle maker to make perfect waffles. I like to use medium/high heat to make my waffles. This typically yields a crispy exterior and moist interior.

After the waffles are done cooking, they are best served immediately. Here are some topping ideas: plain yogurt or sour cream, eggs, bacon, cucumbers, pickled onions, chives, scallions, fresh herbs, jalapenos, tomatoes, olive oil ..the possibilities are endless so get creative!

Savory Cheddar Scallion Waffles

These savory cheddar scallion waffles are perfect for your weekend brunch. They are made with olive oil for a nice boost of healthy fats..

Ingredients:

  • 2 eggs
  • 1 ½ cups buttermilk
  • ¼ cup California Olive Ranch Olive Oil
  • 1 ¾ cups unbleached all purpose flour
  • ½ cup yellow cornmeal
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 1 ½ tsp salt
  • black pepper to taste
  • 1 cup shredded cheddar cheese
  • 3 scallions, thinly sliced

Instructions:

  1. Whisk the eggs, buttermilk and olive oil until combined. Then fold in the all purpose flour, yellow cornmeal, baking powder, sugar, salt and pepper. Once those ingredients are combined, fold in the cheddar cheese and scallions. Mix until combined.
  2. Prepare your waffle iron. I like to spray mine with cooking spray. Preheat your waffle iron to medium/high heat. Then pour as much batter into the waffle iron as the instructions allow. Cook the waffles until they are golden brown.
  3. Serve immediately with toppings of your choice. I used plain yogurt, crumbled bacon, jalapeños, tomatoes, avocado, chives and olive oil
