Eggnog French Toast

Last month, I wanted pumpkin everything. This month I’ve been super obsessed with eggnog. Listen, I actually don’t really drink eggnog, BUT it makes delicious french toast and pancakes too. The key is invest is some really good eggnog. Make sure it’ super rich and creamy, and thick, and flavorful.

I’m sure you could also substitute a dairy free eggnog if necessary. The ground flax helps to bind the ingredients together and make them stick to the toast.

Eggnog French Toast
Eggnog french toast. Perfectly spiced and perfectly sweet.
Ingredients
  • 1 1/4 cups eggnog
  • 1 tbsp ground flax
  • 1/3 tsp cinnamon
  • 8 slices rustic bread*
  • coconut oil or ghee for cooking
  • Instructions
    1. In a wide rimmed bowl, mix the eggnog, flax, and cinnamon.2. Heat coconut oil or ghee in a frying pan over medium heat.3. Dip the bread slices into the batter, one side at a time. Transfer the slices to the pan and cook for about 5 minutes on each side, or until the toast is golden brown. Make sure not to overcrowd the pan. Repeat this process until all slices are cooked.Notes: * slice bread about three quarters of an inch thick. Look for rustic bread in the bakery section of the grocery store.
