Veggie Fried Rice
If I had to choose a favorite food, it'd probably be rice. I know ..it sounds so boring but there are so many ways to spice it up and this recipe is one of my favorites. I love to prep this rice for the week to have with my meals. You can honestly use any mixture of veggies but I listed my favorite ones for this recipe.
I have tried this recipe with olive oil and avocado oil but they just don't compare to the butter. A little butter never hurt anyone so I would reccomend sticking with it. You could also use ghee to keep it dairy free!
Veggie Fried Rice
Ingredients
- 2 eggs
- 2 tbsp butter (divided)
- 1/2 cup chopped mushrooms
- 1/2 cup chopped sweet onion
- 1/2 cup chopped zucchini
- 1 1/2 cups chopped broccoli
- 2 cups short grain rice (cooked)
- 2 tbsp low sodium soy sauce
- salt and pepper to taste
- garlic powder to taste
Instructions
1. Heat a skillet/pan over medium heat. Add in 1 tbsp of butter. After the butter is melted, scramble the eggs for about 2 minutes.2. Remove the eggs from the pan and put aside. Add in the remaining butter. Then add in the chopped veggies and saute for 4-5 minutes stirring occasionally. Season the veggies with salt, pepper and garlic powder to taste. **3. Add in the rice and soy sauce and stir until the soy sauce is well incorporated. Saute for another 4-5 minutes and then stir in the eggs.

Prep time: Cook time: Total time: Yield: 6-7 servings** If your skillet is too small you may have to split the veggies and rice in half and cook separately. This is what I normally do.
