Cilantro Scallion Soba Noodles

Upon making these noodles, I was like wow they kind of have a lot of ingredients. But let me assure you, each ingredients compliments one another. This cilantro scallion sauce is the perfect blend of sweet, savory and tangy and it pairs perfectly with soba noodles. It would probably also make a good chicken marinade if you are into those types of things.

After you make the sauce the longer that you let it sit, the more the flavors blend together and it tastes even better.

Cilantro Scallion Soba Noodles
Ingredients
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • splash of sesame oil
  • 1 tsp chili oil (optional but adds a little spice)
  • juice from half a lime
  • 2 tbsp green onions (chopped)
  • 1/2 cup cilantro (roughly chopped)
  • 1 tsp fresh ginger (minced)
  • 1 package soba noodles
Instructions
1. Mix the wet ingredients together until well combined. Then add in the chopped green onions, cilantro, and fresh ginger. Let this mixture sit for about 30 minutes before using. Cook the soba noodles according to the directions on the package.
